Aloo Kati Rolls with tri color chutnies

Ok to be clear...this is my version of the kati roll. It doesn't taste like the street food kati roll. But it was a creative exercise and I had fun making them. I bought naan/pita things from Indian stores. I just made the stuffing and the sauces for the kati roll.

Kati roll with tri color sauces

For stuffing:

boiled potatoes + salt + coriander/cumin seeds powder + garam masala

Fry the top stuffing in oil for a little and add in thinly sliced onions to the mixture

Orange sauce:

Grind the following: tomato + soaked dry red chills + salt + garlic + cumin seeds

White sauce:

Whisk together: Ranch dressing + yogurt + vinegar + black pepper + lemon juice

Green Sauce:

Grind the following: Mint + coriander leaves + green chills + lemon juice

Roll in some potato mixture inside the pita and add sauces as per taste!
