On Saturday we went out and came home really hungry. N said that there was no need for an extensive menu and a one pot meal would be nice. We have fresh pudina growing in the background so A suggested pudina rice. I love pudina rice--this time we made it a little different and I believe it came out extra great with this particular version.
Pudina Rice
Cook basmati rice in rice cooker
Best to use fresh pudina. Grind raw pudina along with green chillies
In oil:
Cumin seeds + mustard seeds + chopped garlic + lengthwise chopped onions + turmeric + garam masala + boiled potatoes + salt + tomatoes + ground pudina mixture
Once the pudina has lost part of its rawness add in the basmati rice. Make sure the rice isnt too sticky--if it is, keep it on stove for a little longer.
Done.
We also made raita with onions + tomatoes + green chillies to go with it
