Bangaladompa Vankai -- Potato Eggplant Curry

Another eggplant recipe. Trying to cook a different eggplant curry each week---and gathering different eggplants curries. Something tells me I'll be cooking a lot of eggplant in the future ;)

Potato Eggplant Curry

Temper:

Cumin seeds + yenda merapakayalu + minced green chills and ginger + small cut onions + cut tomatoes + turmeric + pinch of garam masala + salt

After this eggplant + potatoes should be added along with a little water.

The eggplant and potatoes can either be fried before or they can be microwaved for a little while before adding them to the above temper.

After a while put the lid and let everything cook well

Curry ready. Very easy recipe to follow!
