Idli Upma and Vankai Kura

In the morning I woke up to find out that we were having idli for breakfast. I don't really like idlis that much, and especially this morning I wasn't in the mood to have them. So I decided to change it up a bit and use the idlis to make idli upma.

Idli Upma:

Cut up idlis

In a wok fry up :

Yellow gram + black gram + mustard seeds + hing + curry leaves + onion + turmeric + salt

Once those are fried up--add in the idlis and its done. Put some lemon on the top :)



Vankai Kura, in style of Bagara Baingan:

Today for lunch I prepared a vankai dish. Vankai is another one of S's fav vegetables. Unfortunately this one didnt come out as good as yesterday's attempt. Me and P enjoyed it, A wasn't much of a fan. What it lacked was little bit of salt and the vankai pieces could be cooked for a little longer. Overall it was a nice dish I felt that could be made better with some minor changes. This recipe can be made using fat chili peppers and I think will come out better as the gravy will work better with them.

Fry: Peanuts + Sesame seeds + grated coconut + garlic + ginger

Grind this mixture

Separately: Cut up eggplants and fry them in oil. Make sure they are atleast 50-75% cooked.

Separately: Fry up Mustard seeds + cumin seeds + onions + turmeric powder --> add in the grinded mixture and garam masala + coriander powder + chilli powder + tamarind water --> As it boils add in the fried eggplants.
