In our house P is the expert in making Indo Chinese food. He makes excellent Indo Chinese fried rice and noodles. So the other day(last week actually...didn't get to update the blog all this time) he made an Indo Chinese Rice with some Thai influences. I asked him for the recipe because this would be something I would love to replicate in the future.
P's special Chinese/Thai Rice
In Oil: Cumin seeds + ginger/garlic paste + peppers + green chillis + thawed frozen stir fry veggies
After a while add in:
Rice + Soy sauce + vinegar + ketchup + schezuan or garlic chilli sauce
Before serving add in:
Microwaved crushed peanuts
Note: Best to use rice that's not too dry (podi podi) or too wet (sticky)
